The Maitake (Grifola frondosa, also known as the “Hen of the Woods”) has been known in Japan since the 11th century. Those who found it performed a joyful dance, which is why it is named “Maitake,” meaning “Dancing Mushroom.” In Asia, this healthy and highly aromatic edible mushroom is considered a delicacy and is said to help with natural weight loss. The mushroom lowers cholesterol levels, counters the accumulation of fat in liver cells, and reduces blood sugar levels in both Type I and Type II diabetes. Maitake also has a balancing effect on high blood pressure.
