This Vital Muesli is perfect for anyone looking to start their day with energy. Using Chufa (Earth almonds or Tiger nuts), it provides a nutritious, plant-based protein boost alongside healthy fats and a range of essential vitamins and minerals.
Ingredients (for 2 servings):
½ Khaki (Persimmon)
2 tbsp blueberries
1 tbsp pomegranate seeds
2 tbsp grapes with seeds
1 tbsp sunflower seeds
1 tbsp flaxseeds
1 tbsp chopped pumpkin seeds
2 tbsp Chufa flour (Earth almond flour)
1 tbsp crunchies (optional)
Natural soy yogurt
Almond milk, soy milk, or oat milk (your choice)
Preparation:
Chop the fruits (Khaki, blueberries, pomegranate) and add them to a bowl.
Mix in the seeds (sunflower, flax, pumpkin) along with the Chufa flour.
Pour the soy yogurt over the mixture and stir.
