This Vital Muesli is perfect for anyone looking to start their day with energy. Using Chufa (Earth almonds or Tiger nuts), it provides a nutritious, plant-based protein boost alongside healthy fats and a range of essential vitamins and minerals.


Ingredients (for 2 servings):

  • ½ Khaki (Persimmon)

  • 2 tbsp blueberries

  • 1 tbsp pomegranate seeds

  • 2 tbsp grapes with seeds

  • 1 tbsp sunflower seeds

  • 1 tbsp flaxseeds

  • 1 tbsp chopped pumpkin seeds

  • 2 tbsp Chufa flour (Earth almond flour)

  • 1 tbsp crunchies (optional)

  • Natural soy yogurt

  • Almond milk, soy milk, or oat milk (your choice)


Preparation:

  1. Chop the fruits (Khaki, blueberries, pomegranate) and add them to a bowl.

  2. Mix in the seeds (sunflower, flax, pumpkin) along with the Chufa flour.

  3. Pour the soy yogurt over the mixture and stir.

  4. Add your preferred plant-based milk (almond, soy, oat, etc.) to get the desired consistency.
