  • ½ can of chopped tomatoes (or 4 peeled, diced fresh tomatoes)
  • 3 red bell peppers
  • 2 yellow or green bell peppers
  • 2 small zucchinis
  • 1 small eggplant
  • 1 purple onion
  • 2 garlic cloves
  • 1 chili pepper
  • 3 tablespoons olive oil
  • Salt & pepper
  • Fresh oregano and basil

Preparation

  1. Cut all the vegetables into small cubes.
  2. Sauté in olive oil over medium heat.
  3. Season with salt and pepper and cook until the vegetables are soft but not mushy.
  4. Let the sauce thicken slightly.
  5. Finely chop the fresh herbs and mix them in.

Peperonata is a perfect side dish for grilled meat, fish, or pan-seared dishes.
