Carrots are low in calories but highly nutritious. They contain essential vitamins and minerals. The beta-carotene (provitamin A) found in high amounts in carrots gives them their distinct orange color. In the body, beta-carotene is converted into vitamin A, which is crucial for the immune system and helps keep the skin and mucous membranes healthy. Our eyes also need vitamin A for night vision, which is why it is often called the “eye vitamin.” When eaten raw, carrots have a mild diuretic effect.
Ingredients
- 4-5 carrots
- 1 lemon
- A pinch of salt
- A bit of olive oil

Preparation
- Wash the carrots thoroughly and grate them finely.
- Sprinkle with a pinch of salt and drizzle with olive oil.
- The fat-soluble beta-carotene is better absorbed by the body when combined with oil.
- Squeeze the juice of a fresh lemon over the salad and mix well.
