Lemon pesto

Miracle Fruit Lemon

The lemon is a true all-rounder when it comes to health. Not only does it have a high content of Vitamin C (53 milligrams per 100 grams with only 35 kilocalories), but this tangy-sour fruit boosts the immune system and prevents infections and colds because Vitamin C protects against viruses and bacteria. Ingredients

  • 1 organic lemon – zest

  • 200 g olive oil

  • 5 g salt

  • 40 g pine nuts

  • 50 g parmesan cheese

  • 10 g parsley and basil (fresh, chopped)

  • Optional: chili flakes or, for an Asian twist, coriander instead of basil


Preparation

  • Mix all the ingredients with an immersion blender until the pine nuts are roughly chopped.

  • Add 50 g of finely grated parmesan and blend briefly again.


Shelf Life

  • Stored in the fridge, covered with olive oil, the pesto is good for at least a week.
