Lavender Drink (Syrup)
Lavender is not only known as a tea but also as a versatile syrup. True lavender is an ancient medicinal plant recommended for restlessness, sleep disorders, and mild depression. It can also help with digestive issues such as nervous stomach, bloating, and irritable bowel syndrome. The essential oils and tannins in lavender flowers are responsible for its healing properties, which include:

Tip:
Herbs can create wonderfully aromatic drinks! To release their full flavor, gently crush them at the bottom of the glass when mixing, or tap them against the rim or a table before use.
Ingredients
Lavender Syrup Recipe (Cold Extraction Method)
- 2 liters of water
- 1–2 kg granulated sugar
- 3 organic lemons (optional: 1 tbsp citric acid)
- 1–2 handfuls of herbs (lavender flowers, rosemary, thyme, peppermint, sage, or other herbs of choice)
Preparation
- Roughly chop the herbs and slice the lemons.
- Place them in a container with a lid or cloth.
- Pour cold water over them, cover, and let sit in a cool, dark place for 1–3 days.
- Strain the mixture into a pot and gently heat it.
- Gradually stir in the sugar and let the syrup simmer for about 10 minutes.
- Add and mix in the citric acid (if using).
- Pour the herbal syrup into sterilized bottles, seal tightly, and store.
Shelf Life
Properly sterilized and sealed, the syrup lasts several months.
Usage
Dilute the syrup about 1:10 with water, serve with ice cubes, and enjoy! Lavender syrup also pairs wonderfully with desserts and muesli.
