The pigment betanin, which gives beets their characteristic color, is one of the secondary plant compounds with antioxidant properties. Ingredients

Recipe: Beetroot with Mashed Potatoes

  • 200 grams of beets

  • 100 grams of potatoes

  • 1 teaspoon of rapeseed oil

  • 1 onion

  • A handful of fresh parsley

  • 25 grams of butter

  • Salt


Preparation

  1. Cook the beets and potatoes until soft.

  2. In the meantime, finely chop the onion and sauté it with 1 tablespoon of rapeseed oil.

  3. Grate the cooked beets, mash the potatoes, and mix in the grated beets, sautéed onions, and parsley.

  4. Season with salt and stir in the butter.
