Healthy Choice: Beetroot
Beetroot is highly nutritious yet low in calories. They are rich in minerals like calcium, phosphorus, potassium, magnesium, zinc, and iron, as well as B-vitamins, vitamin C, and folic acid. The pigment betanin, which gives beets their characteristic color, is one of the secondary plant compounds with antioxidant properties. Ingredients
Recipe: Beetroot with Mashed Potatoes
200 grams of beets
100 grams of potatoes
1 teaspoon of rapeseed oil
1 onion
A handful of fresh parsley
25 grams of butter
Salt
Preparation
Cook the beets and potatoes until soft.
In the meantime, finely chop the onion and sauté it with 1 tablespoon of rapeseed oil.
Grate the cooked beets, mash the potatoes, and mix in the grated beets, sautéed onions, and parsley.
Season with salt and stir in the butter.
